Superfast Chicken Tikka with Chargrilled Peppers, Cauliflower rice and Cashews.
I marinated the chicken and peppers in lazy garlic and ginger, tikka spice mix and 0% fat Greek Yogurt. Then cooked hot and fast in a frying pan, and finished off in the oven, adding a little water to deglaze the pan to make a sauce. Great fun today back at Minishant Primary School for the first of a series of ‘after school cooking classes’. As always the kids aced it! Some of them asked me a few weeks ago how to make KFC. Well this isn’t quite the real thing but healthy oven baked chicken goujons with a yoghurt, lemon, mint and garlic dressing! Less fat, less salt and all made from scratch by the pupils!
